【芒果果醬MAFIA】

一口吃下,大力的咀嚼,檸檬的酸與精油味、咖啡的苦澀與後韻,加上芒果果醬的甜與芒果香氣,多種不同風味在不同時間裡陸續登場,就好像在嘴裡發生槍戰一樣,是一種難以形容,複雜又有趣的風味。

|STEP|

1.把一顆檸檬切成數片,厚度約為3-5mm,把籽剃除。

2.取一些咖啡豆,放進夾鏈袋或塑膠袋,用槌子敲碎,均勻撒在檸檬片上。

3.最後再放上一小匙芒果果醬成為MAFIA的甜味來源。

【Mango jams mafia】

Just one bite and chew, and you can taste the sour and the essential oil of lemon mixed with the bitter and the aftertaste of coffee along with the sweetness and the fragrance of mango jam. Different flavor comes out at different time, like a gun fight inside your mouth. It is unspeakable, complicated, and interesting.

|STEP|

1. Cut the lemon into 3-5mm thick slices of each piece. Pick out the seeds. 

2. Put some coffee beans into a zipper bag or plastic bag, and use a hammer to crack it.Spread the coffee beans on the lemon slices evenly.

3. Put a tea spoon of lemon jam on the top to make mafia sweet.


【紅龍果果醬生乳捲】

紅龍果本身的味道並不強烈,加上甜菜苷素不耐熱,因此用紅龍果果醬做料理通常以冷食或甜點為主,美麗的艷紅色能成為料理中絕佳的天然染色劑!因此格外食譜嘗試將大人小孩都愛不釋口的「生乳捲」加入紅龍果果醬,讓淡雅的水果味中和奶油味,而內餡呈現的粉紅色更是捎來了戀愛的氣息啊,快點動手來試試吧!

|STEP|

1.準備器材:烤箱(可調整上下火)、烤盤(L35xW24cm)、生乳捲鐵盒(L7xW24xH10cm)、料理紙、電動攪拌機

2.準備食材:

內餡-馬斯卡彭起司90g、細砂糖20g、動物性鮮奶油200g、紅龍果果醬70g

蛋糕體-沙拉油50g、低筋麵粉60g、紅龍果果醬20g、鮮奶75g、蛋黃5顆、蛋白5顆、細砂糖70g

3.製作內餡:所有內餡材料冰過後放入攪拌缸以高速打發後,放入冰箱冷藏。

4.製作蛋糕體:

步驟A:沙拉油、低筋麵粉放入鋼盆打勻,放入紅龍果果醬、鮮奶打勻,最後再放入蛋黃打勻備用。

步驟B:將蛋白放入自動攪拌機高速打發,再依序放入1/3細砂糖打發、1/3細砂糖依序打發,最後倒入剩下的細砂糖後,以中低速打發至綿密狀。

將步驟B挖1/3入步驟A內輕輕拌勻至看不到蛋白霜,再將剩下的倒入拌勻。

5.烤蛋糕:料理紙對準烤盤後於四角斜剪4-5公分服貼於烤盤上,將蛋糕體倒入烤盤稍微抹平,拿起烤盤往桌面輕摔3-4次讓大氣泡消除,烤好的蛋糕會比較綿密,接著放入預熱上火200度下火160度的烤箱,烤25分鐘後取出,將蛋糕體放涼。

6.加入內餡:將蛋糕體裁成適合放入鐵盒大小後,在內部先抹上一層紅龍果果醬,再填入約1/2份量的內餡(中間部位)。將完成的果醬生乳捲放入鋪好料理紙的鐵盒後稍微按壓,再反轉放入準備好的蛋糕盒上,完成!

【Red dragon fruit jam cream cake roll】

Red dragon fruit itself doesn’t have a very strong flavor, and it is not heat resistant. Therefore, red dragon fruit is usually served cold or as dessert. The bright red in color makes the dish have a natural colorant! Hence, Goodwill Food tries to put red dragon fruit into the popular cake roll and hope the light taste of fruit will balance the taste of cream, together with the pink stuffing, to bring a taste of love. Let’s try it out!

|STEP|

1. Preparing equipment:oven (The heat can be adjusted), baking pan (L35xW24cm), an iron box (L7xW24xH10cm), cooking paper, electric mixer.

2.Preparing ingredients:

Stuffing: 90g mascarpone, 20g fine sugar, 200g whipping cream, 70g red pitaya jam

Cake dough: 50g soybean oil, 60g low protein flour, 20g red pitaya Jam, 75g milk, 5 egg yolks, 5 egg white, 70g castor sugar.

3. Making stuffing:After freezing all the ingredients for the stuffing, put them all into the electric mixer to beat at high speed. Then put it in the freezer.

4. Making cake dough:

Step1: Mix the soybean oil and low protein flour together in an iron bowl. After that, put in the red pitaya jam and milk to mix. Finally, pour in the egg yolk and mix.

Step2: Pour the egg white into the electric mixer and beat at mid to low speed, and then put in 1/3 of fine sugar each time you mix it. After adding the last 1/3 of the remaining fine sugar, beat slowly until it become creamy.

Put 1/3 of the mixture in step2 into that in step1 and mix gently until you can’t see the former. Then mix the remaining.

5. Baking the cake:Place the cooking paper on the tray, cut 4-5cm in the corner of the cooking paper so that it completely sticks to the tray. Pour the cake dough into the tray and smoothen it. Hold the tray and slightly hit it to the table 3-4 times to remove the air, so that after being baked, the cake will be denser. Next, put the tray into the oven with the upper heat at 200 degree and the lower heat at 160 degree, bake for 25 minutes and then take out the cake to cool.

6. Adding the stuffing:Cut the cake into the size of your iron box, spread a layer of the red pitaya jam, and fill in half of the stuffing (in the middle). Place the finished red pitaya jam cream cake roll onto the iron box with cooking paper, and give it a little pressure. Turn the cake around seam-side down and put it in to the box you prepared. That’s it!
